Tasty Green Muffin for a snack, the children at the park loved it! Ok they’re for us, big kids too :-)

Spinach-Almond-Banana Muffin©

(Carb equivalent to 1 slice of bread, no refined sugar)

 

Preparation time: 10 min

Cooking time: 20 min

 

Ingredients

·        100gr (3/4 cup) almond meal

·        190gr (1 ½ cups) all purpose white flour (or you could do half ground oats half white flour to get some extra fiber from the oats)

·        2 tsp baking powder

·        1 tsp cinnamon

·        Pinch of salt

·        1 medium very ripe banana (it has to be soft)

·        60ml (1/3 cup) sunflower or corn oil

·        2 eggs

·        170gr raw baby spinach washed and dried just the leaves

·        120ml (1/2 cup) whole or 2% milk (you can also use almond milk)

·        1 Tbsp honey (optional)

 

Directions

1.     Preheat oven to 425°F

2.     Mix the first five ingredients in a big bowl

3.     In a blender mix the rest of the ingredients, add 2-3 Tbsp of water if needed to get it started- stop and stir in order for the spinach to blend

4.     Add the liquid mixture to the dry ingredients and mix

5.     Pour into 16 muffin cups

6.     Cook for 5 min at 425°F and then lower the heat to 365°F and cook for approximately another 15min

  

Let them COOL AND ENJOY as a snack or with a glass of milk/ coffee for breakfast, you can taste the banana not the spinach!
