Carrot-grape Chewy bars
Homemade Veggie-Fruit Bar rich in Vitamin A, that add up some calcium to your diet too.
Ingredients
- 180gr green grapes
- 250gr carrots, skin and tips removed, chopped in slices
- 180gr full fat 5% Greek yogurt
- 150gr feta cheese
- ½ cup whole or 2% milk
- 130gr all purpose white flour
- 100gr almond meal
- 2 teaspoons baking powder
Directions
- Preheat oven to 425 °F
- In a blender add the carrots, grapes, yogurt, milk and blend
- In a bowl add the flour, almond meal, baking powder and stir
- Add the carrot mix to the flour mix and stir, adding the feta cheese
- Line a 11”x11” tray with paper or use 16 muffin cups
- Bake for 5 min at 425 °F and then reduce to 375 °F and bake for another 25 min
